Meal Plan Monday #348

 The days are long, but somehow, there's never enough time to get everything done. I leave work exhausted, but I'm never actually finished or even caught up. Hopefully, things will level off soon, or I'll find a way to hold out until May... Here's to a week of relatively quick and tasty meals! 

Monday:  Coconut Curry Chickpeas with Jasmine Rice 

Tuesday:  Tuesday Night Takeout!

Wednesday:  Spinach and Cheese Ravioli with Mushrooms, Bell Peppers, Italian Sausage, and Parmesan and Salad

Thursday:  Mahi Mahi Fish Tacos with Cabbage, Lime, and Avocado and Fruit

Friday:  Date Night Takeout! Darren's Lib's Pick!

Saturday:  Breakfast for Supper! Bacon, Egg, Cheese, and Potato Burritos and Fruit Smoothies

Sunday:  Round Steak and Gravy with Mashed Potatoes, Butter Beans, and Biscuits

Meal Plan Monday #347

 We're trying something new this week with adding a day of takeout. With my new school schedule, the days are crazier than ever, and I need a break already! Darren's classes has started for the semester, so he is working and going to school. We both need more time to relax!

Monday:  Bacon Brussels Sprouts Pasta and Caesar Salad

Tuesday:  Tuesday Night Takeout!

Wednesday:  Broiled Sandwiches, Chips, and Fruit

Thursday:  Seared Tuna with Avocados, Rice, and Salad

Friday:  Date Night Takeout! Darren's Pick!

Saturday: Breakfast for Supper! Sausage, Egg, Cheese, and Hashbrown Breakfast Burritos!

Sunday:  Japanese Curry Lentils with Sweet Potatoes and Carrots over Rice with Fried Eggs for Darren

Virtual school has started, and the days are exhausting. At least we're synchronous this time so I get to see my students every day. My last class ends at 4:20, and it takes around 30 minutes to convert the recording of the video conference so that I can upload it to our LMS. It's a pain...

Monday:  Red Beans and Rice with Corny Cornbread

Tuesday:  Spinach and Cheese Tortellini Primavera with Mushrooms, Asparagus, Bell Peppers, and Carrots

Wednesday:  Thai Red Curry Lentils with Jasmine Rice

Thursday:  Blackened Fish Tacos with Cabbage, Radishes, Lime, and Avocado

I am trying to streamline meal planning by having a defined plan for a few days of the week - for examples, Mondays will be beans or some other slow cooker meal, Thursdays will be fish, and Saturdays will be breakfast. 

Monday:  Dried Lima Beans with Salad and Jalapeno-Cheddar Cornbread


Wednesday:  Speckled Butter Beans with Ham Steak and Biscuits

Thursday:  Seared Tuna Steaks, Faux Macque Choux, and Rice

Friday:  Date Night Takeout! Darren's Pick!

Saturday:  Breakfast for Supper! Pancakes or Waffles with Bacon or Ham

Sunday:  Loaded Pressure Cooker Chicken "Carnitas" and Bean Burritos (Corn, Peppers, Avocado, Sour Cream, etc.)
