Meal Plan Monday #46

After being sick last weekend, I had my wisdom teeth out on Friday. So far, things have been okay - a little soreness, but not too much swelling. The worst part is that I am so hungry for real food. I didn't want to eat much of anything after being sick, and now I am hungry for delicious foods that I can't eat yet!

We have been getting some great corn, and I have made guacamole with roasted corn twice lately. I REALLY want to make this corn and wild rice dish from PW and I am craving squash gratin like this one from Deep South Dish or this creamed squash. I also really want to make stuffed peppers.

Soon, my friends, soon, I will get to eat all of the delicious spring produce I have been craving. In the mean time, another week of mostly boring food...

Sunday: Sour Cream Mashed Potatoes and Artichokes (from the Cushman's garden)

Monday: Pasta with Cream Sauce and Broccoli

Tuesday: Scalloped Potatoes with Ham, Lima Beans, and Biscuits

Update: What's Going On With the Two Chemists?

These last few weeks have been very busy for us. We traveled to Saint Louis for my brother's wedding two weeks ago.
Then last weekend, I was sick, and Darren had to take care of me - clear liquids and a bland food diet for several days after that, so no exciting new food posts.

Today, I got my wisdom teeth removed, so I'll be on a restricted diet for a week or two. Probably no exciting food posts this week either, unless Darren is up to making some exciting foods to eat alone.

On the up side, the school year is winding down, and I hope to get back to some of my small-batch work this summer. The weather here is already really warm, and we are both looking forward to getting outside to grill. I have been working on some recipes for grilled chicken with Caribbean jerk seasonings and Indian tandoori seasonings. We got a set of firewires that we need to try out. There are beautiful ears of corn and summer squash and other produce that I can't wait to cook.

Meal Plan Monday #45

We have just come back from my brother's wedding. It was nice, not only did we get to see Mike and Hannah get married, but Darren also got to meet some of my family that he had never met before. But the trip was too rushed!

Since we were at the wedding Friday night and we didn't get to go out to eat last night, we are having two date nights this week!

Meal Plan Monday #44

Way back in February, my mother-in-law gave me a gift card to Penzeys Spices. I go there occasionally to buy a special spice, like the garam masala for Darren's Japanese curry. I had been holding on to the gift card for a while, waiting to need or want something special. A week ago, a coworker, who is Indian, brought in some Tandoori chicken to share, and it was amazing! She said it was easy, and she uses Penzeys' Tandoori seasonings and plain yogurt as the main parts of the marinade. We went to Penzeys' this weekend and bought the Tandoori seasoning and also a jar of the Jerk seasoning. Grilling season is upon us, and we are getting prepared.

Monday: Sausage, Mushroom, and Potato Quiche with Salad

We've got a regular week around here. It's getting warmer all the time, so we are trying to fix those last rounds of hearty, wintery meals before we start doing more of our cooking outside on the grill.
