Meal Plan Monday #260

March is almost over, our anniversary is Monday, and Easter is almost here. We're both looking forward to having a day off work on Friday! Pajama day? Maybe... In the mean time, we've still got to cook and eat, so here's what's on the menu:

Sunday:  Vegetable Thai Curry and Jasmine Rice

Monday:  Cheese Ravioli and Sautéed Asparagus and Salad

Tuesday:  Black Bean Corn and Sweet Potato Stuffed Poblano Peppers (my edits)

Wednesday:  Tutorial Night Takeout!

Thursday:  Easy-Peasy Bean-n-Cheesey Quesadillas and Fruit Salad

Friday:  Date Night! Darren's Pick!

Meal Plan Monday #259

Spring Break is over, but that means the end of school is just around the corner... There's so much to do, but I know the next 10 weeks will FLY!

We're still trying to eat meatless at home, so there's a lot of veggie based meals this week. We did go out for lunch on Friday, and the place had colcannon, which reminded me of eating rumbledethumps with coworkers when I was first teaching. I probably haven't eaten it in over 15 years.

Sunday:  Peanut Noodles with Vegetables

Monday:  Rumbledethumps and Avocado Toast

Tuesday:  Vegetable Curry with Jasmine Rice

Wednesday:  Tutorial Night Takeout!

Thursday:  Thai Pineapple Fried Rice

Friday:  Date Night! Lib's Pick!

Countdown to SPRING BREAK! Meatless March is on, too! I'll be trying new recipes out, because I usually only cook vegetarian maybe once per week... here we go!

Sunday:  Roasted Root Vegetables and Salad

Monday:  Black Bean and Cheese Quesadillas with Avocado, Sour Cream, and Salsa

Tuesday:  Spinach and Ricotta Pasta with Garlic Bread and Salad

Wednesday:  Tutorial Night Takeout!

Thursday:  Burrito Bowls with Rice, Black Beans, Corn, Onion, Bell Peppers, and Cheese
