Meal Plan Monday #272

Our week in Nashville is over. We ate so (too?) much hot chicken, but it was fun to try a bunch of different variations. We did at least one touristy or fun thing everyday, and we also spent some time relaxing with our friends. We are back home and back to regular work/summer things.

Sunday:  Roasted Vegetables (whatever summer veggies look good) and Salad

Monday:  Salads from Grill@Jackson Square

Tuesday:  Seared Tuna with Rice and Spinach Salad with Goat Cheese

Wednesday:  Black Bean and Sweet Potato Stuffed Poblano Peppers with Avocado

Thursday:  Crispy Potato Tacos with Fried Corn Relish, Cheese, and Avocado

Friday:  Date Night! Lib's Pick!
