Aaaanndd... we're back! It has been a very busy summer for us, so I took off meal planning for a while. We were gone a lot, and it was often too hot to cook anyway. :)
We're still trying to eat less meat, so we're trying to limit the menu to one meat-heavy meal per week, with one fish option, and the rest vegetarian meals. I'm going to try making Mongolian beef sans beef. Since the sauce is what really makes the dish, I think it will turn out. We usually include broccoli and carrots in it, so I'm just going to up the veggies with cauliflower, bell pepper, and onions.

Wednesday: Tutorial Night Takeout
Thursday: Roasted Potato Fajita Tacos with Avocado and Corn Relish
