Meal Plan Monday #144

It's the first full week of school and it's HOT down here in the dirty. That means looking for quick/easy dinner ideas. I've also been scrolling back through older posts to see what we haven't eaten in a while - those three weeks without a real refrigerator were tough on meal planning, so I went back to the end of school and before. We have our official ceremony to welcome the new junior class on the first Sunday of the school year, and they schedule it at 6:30 pm. I don't know about you, but that's just about the time I want to be eating supper! Since I lit a candle this year, and Darren was out of town for a wedding all weekend, there wasn't a lot of time left for cooking, so we had take-out. The busy season has begun! Here's to a great school year!

Sunday:  Take-out and the Ceremony of Lights

Monday:  Meatless Monday! Cheese Ravioli with Wilted Spinach, Basil, and Parmesan

Tuesday:  Quick Korean Beef over Rice with Shredded Carrots and Cabbage and Steamed Edamame

Wednesday:  Tutorial Night! Seared Tuna Steaks and Rice with Salad

Thursday:  Chicken Quesadillas with Baked Refried Beans and Avocado

Friday:  Date Night! Lib's Pick!
