Meal Plan Monday #407

Somedays it feels like fall, and I'm wearing deeper, darker colors, so let's hope this week stays cool for some heartier suppers.

Sunday:  Red Beans and Rice with Conecuh Sausage, Salad, and Jalapeno Cheddar Cornbread

Monday:  Goat Cheese Ravioli with Roasted Butternut Squash, Browned Butter, & Pepitas, and Napa Cabbage "Caesar" Salad

Tuesday:  Enfrijoladas Filled with Spinach, Mushrooms, Peppers, Corn, Onions, and Cheese topped with Avocado and Crema

Wednesday:  Tutorial Night Takeout!

Meal Plan Monday #406

Is it fall? Some mornings or evenings, it almost feels like it, but it seems like every time I plan a fall meal, it's 85+ degrees that day... Cooler temperatures are predicted for the extended forecast. I hope it's true. There was a distinct chill in the air at the farmers market on Saturday.


Monday:   White Pizza with Spinach, Mushrooms, Artichoke Hearts, Jalapenos, Bacon, and Fresh Mozzarella and Caesar Salad

Tuesday:  One Pot Macaroni and Cheese with Sautéed Peppers, Onions, Spinach, and Mushrooms

Wednesday:  Tutorial Night Takeout!

Thursday:  Seared Tuna Steaks with Avocados, Rice, and Salad

Meal Plan Monday #405

Once a month, if there is no big holiday, we have an extended (three-day) weekend - the residence halls close and all the students go home. Our schedule is usually so hectic, that it's a nice break for everyone. I absolutely enjoy it! I enjoyed my October extended weekend. Now it's back to the daily grind.

Sunday:  Green Bean, Carrot, and Bell Pepper Thai Curry with Jasmine Rice

Monday:  White Pizza with Spinach, Artichoke Hearts, Jalapenos, Bacon, and Fresh Mozzarella and Caesar Salad

Meal Plan Monday #404

404! Meal Plan Not Found 😉


Our local farmers' market operates April through October. It's open on Saturday and Thursday mornings (7-10 am) and Monday afternoons (4-6 pm), but Saturdays are usually the best day. I am usually up early on Saturday mornings, but I often forget about it until it's too late - either it's picked over or I missed it entirely. I remembered early and went on Saturday just after 7:00 to check out the end of season offerings to see what I could incorporate into my meal plan (FM). I was looking for potatoes (score!) and any other vegetables that looked good. I also encountered a bakery booth that I'd never seen before and I picked up a few things there. 

Sunday:  Sausage, Spinach, and Mushroom Quiche and Caesar Salad

Monday:  Corn and Potato (FM) Chowder with Salad and Jalapeno Cheese Bread (FM)

Tuesday:  Black Beans, Fajita-Style Vegetables (Peppers, Onions, Squash (FM), and Mushrooms), and Jalapeno Cheese Grits

Wednesday:  Tutorial Night Takeout!

Thursday:  Seared Tuna Steaks, Rice, and Avocado with Salad
