Our trip to Birmingham for Darren's birthday was a huge success! We both had a great time. We got to visit a little with my cousin and her 5 y.o. twins. We met them at a trampoline park and then had lunch. We had a great dinner at Texas de Brazil. We took Halley to Vulcan Park, and we did some shopping. It was a great relaxing weekend, and a fun birthday trip for Darren. Now on to exam week.

Meal Plan Monday #3

This week, we are relying on some favorites and incorporating a few new things, too. We have leftover dry rub from last week's ribs, so I am going to try it on a chicken. I think we'll be using the beer can method. And we'll be trying out another recipe from Plain Chicken, which we'll be halving since there are only two of us.

Sunday: Sizzling Fish with Rice and Creamed Spinach

Monday: Seared Steak with Salad

Tuesday: Lo Mein (made with rice stick) with Chicken and Vegetables

Wednesday: Baked Chicken (dry rubbed) with Black-Eyed Peas and Cornbread

Thursday: Three Cheese Chicken Alfredo Bake with Spinach Salad

Friday: Date Night! (Darren's Pick)

Moving and Recipe Variation

Moving really takes it out of me, or moving in the desert heat does. We are so excited about getting settled in our new apartment, but all of the moving and unpacking have not left much time for cooking and blogging. Hopefully, that will change really soon.

My goal is to put up one new food post or recipe each week after we get fully settled into our new apartment. I might also start adding some other things, too. We'll see how it all goes.

Anyway, I just wanted to let any faithful readers out there know that we will be coming back soon. I'm looking forward to taking pictures that include our new dishes and glasses, and using some of our new kitchen gadgets.

One quick variation of a previously posted recipe. Tonight, we made buffalo chicken pockets. Instead of bell peppers and onions, as in the chicken philly pockets, we left out the bell peppers, onions, and spices, and made buffalo pockets with spinach and Frank's Red Hot. I thawed and drained a 12 oz. package of frozen chopped spinach and added it after the chicken was cooked through. Once the spinach was warmed, I added the block of cream cheese and some Frank's to taste, probably 1/4 - 1/3 c. for our taste. Then we filled the pockets and baked them. Delicious!

I hope everyone is enjoying summer!

Ricotta Pasta

I made this last night for dinner. It is a super fast meal that tastes good. It is actually based on the filling of a recipe for stuffed shells with alfredo sauce. I can't find the original right now, but maybe one day I will make it again and post it. Until then, here is my weekday short cut.

You will need:
1 lb. pasta
15 oz. container of ricotta (I use low fat, but part-skim or whole milk will work, too).
10 oz. box or 12 oz. bag of frozen spinach
crushed red pepper
salt
pepper
nutmeg
parmesan cheese

Thaw the spinach and ring out as much water as possible using a kitchen towel. I use one I don't like that has some ugly chickens on it.
Cook the pasta according to the package directions. I used a half box of bowties and a half box of penne.
Drain the pasta and mix with the container of ricotta.
In a medium sauce pan, melt the butter.
Add some red pepper, and stir constantly until the fragrance comes out.
Add the spinach and heat through. Season with salt, pepper, and nutmeg to taste.
Mix the spinach into the pasta-ricotta mixture. Sprinkle a little parmesan on top, and it's time for dinner!
