Meal Plan Monday #214

February is almost over. The weather has been crazy the past few weeks. The temperature has been above 75 several days, but we've still had some freezing temperatures at night. We've got application review coming up at work, and I'm counting down for spring break! I'm ready for a break.

Sunday:  Grilled Pork Chops with Roasted Vegetables and Pretzel Rolls

Monday:  Cheese Raviolis with Spinach and Mushrooms and Salad

Tuesday:  Darren's Fried Rice and Salad

Wednesday:  Tutorial Night Takeout!

Thursday:  Red Beans & Rice with Sausage and Cornbread

Friday:  Date Night! Darren's Pick!

Meal Plan Monday #155

It's November! I can hardly believe how fast this year is going. There were so many things I wanted to do in October, and accomplished approximately none of them. That's okay - I did some fun things anyway, and the work will still be there waiting for me when I get around to it. It has been raining here, and I am sure I will be suffering from sleep schedule changes this whole week (thanks, Halley), so I'm going to try to keep suppers simple. I miss living in AZ and not having to deal with time changes.

Sunday:  Caesar Salad after Brunch at Lion Hills and the Blue Notes' Concert

Monday:  Chipotle Lime Broiled Salmon with Roasted Broccoli & Cauliflower and Mashed Potatoes

Tuesday:  Bacon, Potato, and Mushroom Quiche with Salad

Wednesday:  Tutorial Night Takeout

Thursday:  Pepperoni French Bread Pizzas with Salad

Friday:  Date Night! Lib's Pick!

Meal Plan Monday #44

Way back in February, my mother-in-law gave me a gift card to Penzeys Spices. I go there occasionally to buy a special spice, like the garam masala for Darren's Japanese curry. I had been holding on to the gift card for a while, waiting to need or want something special. A week ago, a coworker, who is Indian, brought in some Tandoori chicken to share, and it was amazing! She said it was easy, and she uses Penzeys' Tandoori seasonings and plain yogurt as the main parts of the marinade. We went to Penzeys' this weekend and bought the Tandoori seasoning and also a jar of the Jerk seasoning. Grilling season is upon us, and we are getting prepared.

Sunday: Jerk Chicken with Spinach Salad and Mashed Sweet Potatoes

Monday: Sausage, Mushroom, and Potato Quiche with Salad

Tuesday: Tandoori Chicken with Salad and Jasmine Rice

Wednesday: Fish Tacos with Cabbage and Roasted Corn Guacamole

Thursday: Salmon, Steamed Vegetables, and Salad

Friday: Date Night! Mike and Hannah's Wedding!
