We are trying to do a better job of eating vegetables. The easiest solution we have found is to start dinner with a salad. We have really been enjoying spinach salads lately. We use baby spinach, a can of mandarin oranges that has been drained, a handful of dried cranberries, and a handful of nuts (pecans or almonds). Then we dress it with Brianna's Poppy Seed dressing. This salad is really versatile, and can be made into a seasonal salad by replacing the canned/dried fruits with ones that are in season. We've enjoyed the salad with peaches or nectarines, strawberries, or pears. I still like the dried cranberries in the pear version. Raisins or dried cherries can be used, too.
