I didn't post last week, because I didn't know what we'd be eating in advance. We went to Wyoming for vacation. It was amazing and beautiful. We went to Grand Teton and Yellowstone National Parks. Snow King Resort in Jackson was our base for the week.
We ate out most nights, but we did cook two nights. I made a variation of the spicy chicken pasta that I've posted on here before with lots of spring vegetables, and our friend Mai-Li made grilled chicken and spinach-basil orzo. Our last night, we ate an amazing dinner at Local. It's a bit pricey, but the Chef's Burger is the best hamburger I have ever eaten.
This week, we'll try to get back into a regular routine. I am working on customizing the house that we bought last summer. We are finally getting around to painting the guest rooms. It is also very hot here, so we'll eat quick indoor dinners and cook some outside.

Monday: Jerk Chicken Skewers with Bell Peppers, Onions, and Mushrooms
Tuesday: Hamburgers with Grilled Corn Guacamole and Grilled Brussels Sprouts
Wednesday: Seared Halibut Steaks with Salad
Thursday: BBQ Chicken Sandwiches with Chips
Friday: Date Night! Joint Pick!
