Meal Plan Monday #326

One week until Spring Break! And I'm staying pretty caught up on grading - it might be the first time ever...

Sunday:  Roasted Chili Mac-n-Cheese (One Pot? Not?) and Salad

Monday:  Easy Peasy Bean-n-Cheesey Quesadillas with Homemade Refried Beans, Avocado, Sour Cream, and Salsa/Hot Sauce

Tuesday:  Thai Curry Lentils with Jasmine Rice

Wednesday:  Tutorial Night Takeout!

Thursday:  Blackened Mahi Mahi with Rice and Salad OR Diner's Choice - Loads of Leftovers

Friday:  Date Night! Lib's Pick!
