Meal Plan Monday #312

It's rec letter season, so I'm extra busy. I hope I can get everything done this week... We're still trying to eat less meat. Our goal is only one night a week of chicken, pork, or beef, plus one night of fish. Some weeks are better than others, and sometimes, you just need to satisfy a craving, like the jambalaya I made last week...

Sunday:  Roasted Butternut Squash and Quinoa with Goat Cheese, Browned Butter, and Toasted Pumpkin Seeds (like a deconstructed version of this ravioli dish)

Monday:  Chicken, Bean, and Cheese Quesadillas

Tuesday:  Black Beans and Rice with Brazilian Cheese Bread

Wednesday:  Tutorial Night Take Out

Thursday:  Blackened Mahi Mahi and Salad

Friday:  Date Night! Darren's Pick!
