Meal Plan Monday #346

Virtual school has started, and the days are exhausting. At least we're synchronous this time so I get to see my students every day. My last class ends at 4:20, and it takes around 30 minutes to convert the recording of the video conference so that I can upload it to our LMS. It's a pain...

Another week, another meal plan...

Monday:  Red Beans and Rice with Corny Cornbread

Tuesday:  Spinach and Cheese Tortellini Primavera with Mushrooms, Asparagus, Bell Peppers, and Carrots

Wednesday:  Thai Red Curry Lentils with Jasmine Rice

Thursday:  Blackened Fish Tacos with Cabbage, Radishes, Lime, and Avocado

Friday:  Date Night Takeout! Lib's Pick!

Saturday:  Breakfast for Supper! Bacon and Cheesy Grits with Eggs and Biscuits
